Bump the SpringDoc version back down

With a higher SpringDoc version, ordering of parameters is in some cases reversed. This causes compatibility issues through Labradoor with Queue and Submit. Because of these issues, we decided to bump this version back down while maintaining Labracore until later bumping up this version again.
