After rails 7.0 - Switching defaults

Open Taico Aerts requested to merge post-rails7-upgrade into development

After the upgrade to rails 7 has been rolled out and stable for a while, we should properly switch to the new defaults.

Effectively, this MR makes cookies set by rails 6.1 invalid.
